Ingredients
1 cup whole wheat flour
1/2 cup cake flour
2 free-range eggs
1/2 cup Greek yogurt
1 mashed banana
1/4 cup honey or brown sugar
1 tsp baking soda
1/4 cup dark chocolate chips (optional)
1/4 cup chopped walnuts or blueberries
Instructions
Preheat oven to 350°F (175°C).
In a bowl, whisk eggs, yogurt, banana, and honey.
Add flours and baking soda, mix until smooth.
Fold in chocolate chips or nuts.
Fill muffin tins lined with cups.
Bake 18–22 minutes until golden and firm.
Let cool and enjoy warm or chilled.
Notes
For high-protein Buffin Muffins, add 2 tbsp protein powder.
For vegan version, replace eggs with flax seeds and use maple syrup.
