Ingredients
1/2 cup melted unsalted butter
1/3 cup cocoa powder
3/4 cup white sugar
1/4 cup brown sugar
2 large eggs
1 tsp vanilla extract
3/4 cup cottage cheese (blended until smooth)
1/2 cup all-purpose flour
1/4 tsp salt
1/2 tsp baking powder
1/2 cup mini chocolate chips
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, mix melted butter and cocoa powder until smooth.
Add white sugar and brown sugar, and whisk to combine.
Beat in eggs one at a time, then add vanilla extract.
Fold in the blended cottage cheese until smooth.
In a separate bowl, mix flour, salt, and baking powder.
Add dry ingredients to the wet mixture. Mix gently until just combined.
Fold in chocolate chips.
Scoop into mini muffin tins (fill 3/4 full).
Bake for 14–17 minutes. Let cool before serving.
Notes
Don’t overmix the batter; it keeps the bites light.
Add a pinch of espresso powder to boost the chocolate flavor.
Sprinkle sea salt on top before baking for contrast.
Best enjoyed within 3 days or freeze for longer storage.
Use dark chocolate chips for less sugar and richer taste.
