Ingredients
1 cup Medjool dates, pitted
½ cup raw almonds or walnuts
2 tablespoons unsweetened cocoa powder
1 pinch of salt
Optional: 1 tsp vanilla extract
Optional: 1 tbsp nut butter
Optional: shredded coconut or crushed seeds for coating
Instructions
Soak dates in warm water for 5–10 minutes if dry, then drain and pat dry.
In a food processor, pulse the nuts until crumbly.
Add cocoa powder, salt, and dates. Blend until sticky and well combined.
Roll mixture into small bite-sized balls.
Chill on parchment paper for 20 minutes before serving.
Store in the fridge (up to 2 weeks) or freezer (up to 3 months).
Notes
For extra protein, add 1 scoop of vanilla or chocolate protein powder.
Roll in cocoa powder, chia seeds, or shredded coconut for variety.
You can swap cocoa for carob powder for a caffeine-free version.
