Oatmeal Fudge Bars

These oatmeal fudge bars are chewy, fudgy, and rich—perfect for nostalgic treats, lunchboxes, or cozy weekends.

Ingredients

  • 2 cups rolled oats

  • 1 cup all-purpose flour

  • 1 cup brown sugar

  • ½ cup butter, melted

  • ⅓ cup unsweetened cocoa powder

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 can (14 oz) sweetened condensed milk

  • 1½ cups semi-sweet chocolate chips

Instructions

  • Preheat oven to 350°F (175°C) and grease an 8×8 baking dish.

  • In a large bowl, mix oats, flour, cocoa powder, and brown sugar.

  • Stir in melted butter, eggs, and vanilla until just combined.

  • Press half the mixture into the pan and bake for 10 minutes.

  • In a saucepan, melt condensed milk and chocolate chips until smooth.

  • Spread fudge over baked layer.

  • Top with remaining oat mixture and press gently.

  • Bake for another 15–18 minutes until golden.

 

  • Cool fully before cutting into squares.

Notes

  • For dairy-free: Use plant-based butter and coconut condensed milk.

  • Optional: Add chopped nuts or dried cranberries to the fudge layer.

  • Slight underbaking keeps the center extra fudgy.
